Short and Tasty {What's for Dinner? 3/30/2010}

I'm tired and trying to get caught up so this is going to be short and sweet.

Last night's dinner was Peppercorn Chicken with Lemon Spinach {click the link for the recipe} from Food Network Magazine. It was really good!! Definitely a keeper. I love finding new, interesting, delicious chicken recipes!

  1. Do you thaw out chicken the night before, or always have fresh chicken available?

  2. Well we usually "menu plan" on the weekends so that we know what we are having for the week. Then, based on the menu, I will thaw out whatever needs thawing a day or two before we plan on eating it.

    No matter how much we plan though, there are still nights when we're like "Oh crap...we didn't thaw ____." On those nights we usually speed the process along by either defrosting in the microwave or putting the meat in a bowl of water for an hour or so (the water speeds the process along considerably).
